Ingredients:
- 4 cups cooked rice (day-old preferred)
- 2 eggs, lightly beaten
- 1 small zucchini, sliced into half-moons
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 1 cup mushrooms, sliced
- ½ cup onions, diced (or pearl onions, halved)
- 3 tbsp soy sauce
- 2 tbsp sesame oil (or vegetable oil)
- 1 tbsp butter
- 2 green onions, chopped (for garnish)
- Salt & pepper to taste
Instructions:
- Heat the griddle to medium-high and add sesame oil.
- Cook the veggies: Place zucchini, carrots, onions, mushrooms, and broccoli on the hot surface. Stir-fry for 4–5 minutes until tender-crisp. Push to the side.
- Scramble the eggs: Add butter to the center of the griddle, pour in eggs, and cook until just set.
- Add rice: Spread the rice on the griddle, breaking up clumps. Stir in soy sauce and mix well.
- Combine everything: Toss the vegetables and eggs back into the rice. Stir-fry until hot and well mixed.
- Finish & serve: Season with salt, pepper, and top with fresh green onions. Serve hot right off the griddle!
