Few things beat the crispy edges and juicy flavor of a smash burger fresh off the griddle. Pair it with sweet, golden caramelized onions and a toasted brioche bun for the ultimate backyard burger.
Ingredients:
- 2 lbs ground beef (80/20 blend for juiciness)
- 1 large sweet onion, thinly sliced
- 4 slices sharp cheddar cheese (or American for classic melt)
- 4 brioche buns, lightly buttered & toasted
- 2 tbsp unsalted butter (for onions)
- 1 tbsp neutral oil (for griddle)
- Kosher salt & freshly cracked black pepper, to taste
- Optional toppings: dill pickles, shredded lettuce, tomato slices, burger sauce or mayo
Instructions:
- Caramelize the onions - Heat your griddle to medium. Add butter and onions. Cook low and slow, stirring occasionally, until onions turn deep golden brown and sweet (12–15 minutes). Move to the side of the griddle to keep warm.
- Toast the buns - Spread a thin layer of butter on the brioche buns. Place cut-side down on the griddle until lightly golden. Remove and set aside.
- Smash the patties - Increase the heat to medium-high. Lightly oil the surface. Roll beef into loose 4-oz balls. Place each ball on the griddle and immediately press down firmly with a spatula or burger press until thin (about ¼ inch). Season generously with salt and pepper.
- Cook & cheese - Let patties sear undisturbed for 2–3 minutes until edges are crispy and caramelized. Flip once, top with cheese, and cook another 1–2 minutes until cheese melts.
- Assemble & serve- Layer caramelized onions over each patty, then place on toasted buns. Add desired toppings and sauces. Serve immediately while hot and juicy.
Griddle Tip: For extra indulgence, double-stack two patties per burger with onions sandwiched between layers.
