Peach French Toast

Sweet, smoky, and perfect for a weekend brunch, this Grilled Peach French Toast combines golden grilled Texas toast with caramelized peaches in a rich butter-rum syrup. This elevated breakfast brings together the flavors of summer and the irresistible taste of cooking outdoors.


Ingredients:

  • 5 large eggs
  • ½ cup milk
  • ¾ cup granulated sugar
  • 1 Tbsp ground cinnamon
  • 8 slices Texas toast
  • 2 Peaches
  • Pecan's (Optional)
  • Powdered Sugar (Optional)

Instructions:

  1. In a medium bowl, whisk together the eggs and milk until well combined.
  2. In a separate bowl, mix the sugar and cinnamon. Set both mixtures aside.
  3. Slice each peach into medium-sized wedges.
  4. Preheat your griddle to medium-high heat.
  5. Griddle your peaches for a few minutes until they are soft.
  6. In a saucepan, combine the sugar and water. Cook over medium-high heat, swirling occasionally, until the mixture turns a deep amber color.
  7. Reduce the heat to low and whisk in the butter until melted.
  8. Carefully stir in the rum.
  9. Add the peaches to the saucepan and set aside.
  10. Lightly coat each slice of toast in the egg mixture, allowing any excess to drip off.
  11. Griddle for about 3 minutes per side, or until golden brown.
  12. While still warm, gently coat each slice in the cinnamon-sugar mixture.
  13. Top with the peach combination

Tip: For an extra touch, garnish with a light dusting of powdered sugar or pecans.
